(2 large or 4 small portions):
- 1-2 cups chopped cucumber
- 1 thick slice of red or sweet yellow onion
- 1 sm/medium vine tomato
- 1/2 can tomato sauce (no sugar added!)
- 1 tsp salt
- 1 tsp Teeny Tiny Spice Oaxacan Adobo
1. Combine all ingredients in a large blender or food processor.
2. Blend well, until smooth.
3. Garnish with cucumber, cilantro, avocado, or your favorite soup topping.
